Exquisite Sun-Dried Tomatoes, and Feta, Zucchini Pasta

1 large zucchini, grated- using a cheese grater

2 inches peeled zucchini

6 sun dried tomatoes, soaked in warm water

1/4 cup goat feta cheese

1/4 cup chopped tomato

A few fresh basil leaves for garnish

Prep:  10 minutes

Grate the zucchini, and pile it on top of itself, as shown

In your Magic Bullet, blend the sun dried tomatoes, plus 2 tsp of the feta, plus the 2 inches of peeled zucchini, plus 1 tbsp of warm water

Top zucchini with your sun-dried mixture, followed by the tomatoes

Sprinkle the goat feta across the pasta and garnish with fresh basil leaves and freshly ground pepper.

Serve.  Enjoy.

The zucchini looks, and tastes light and elegant.  Its delicate texture feigns a pasta salad.  The sun-dried tomato, feta pate, is richly creamy, salty, and adds a chewy Italian texture– all without any added oil.  The chopped tomatoes add vibrant, watery color, while the goat feta is creamy, sharp, and salty- with a mild tang.

Enjoy as an appetizer, or a light entree.
