Don’t get me started on dairy.
There are many reasons I avoid dairy products for my overall health.

So let’s try this very simple coconut cream recipe instead.
It’s nicer ice cream.
Like a nice cream.
Coconut is high in fat, yes, but when consumed with a simple vegetarian meal, it is quite easily metabolized, and a great source of lauric acid– thought to fight pathogens in the body (and thus enhance the metabolism and immune system). I like fat. All fat is not all created equally, but healthy fats are necessary for a healthy body. (Here is a little article I wrote on the topic of “fat” back in the day.)
This particular recipe has a touch of lemongrass essential oil, a fragrance commonly used to elevate and relax the mind, and also commonly used in spa settings. Because… You. Are. Worth. It.
A touch of basil adds a subtle clean earthiness to the blend, to balance out the this decadent dessert. Don’t got lemongrass oil? No worries… try a squeeze of fresh lemon, or pick of some fresh lemongrass in the fresh herb part of your produce section.
Don’t got lemongrass herbs? Try fresh mint!
Either way, you will be oooohing and ahhhing and savoring every little taste.
4 cups young thai coconut meat, previously frozen
1/2 cup water
3 fresh basil leaves
2 tbsp fresh lemon juice
3 drops essential lemongrass oil
1 cup ice
Add coconut meat and water to high speed blender and blend until smooth. Add lemon juice, ice, and essential oil and blend on high. Scoop into small ice cream bowls and move to freezer for 2 hours. Can then be moved into fridge until ready to serve. Do not let freeze all the way through. Can also be served as a chilled “pudding” instead of ice cream.
