My love for the “wrapper” life just intensified with this easy combination of fresh vegetables, my standard but favorite Nori, and my discovery of these badass Siete almond flour tortillas.
I mean… we are talking flavor and creamy goodness within every bite, and gluten and grain-free for happier digestion that doesn’t omit flavor.
That’s my type of meal!
2 sheets of nori
2 Siete Almond Flour Tortillas
3 small organic baby bell peppers, thinly sliced on a mandolin
1/4 cup shredded beets, and or carrots
1 cup your choice of microgreens, or mixed greens
1 half avocado, sliced, halved
1/4 cup thinly sliced, diced, or shredded dry veggie of choice (think zucchini, bell pepper, summer squash)
1/2 cup scallions, thinly sliced
1/8 tsp sea salt, or to taste
Start with one full sheet of nori on a large cutting board.
Lay one Siete tortilla on each piece of nori then evenly disperse half of your prepped ingredients onto your first sheet of nori, starting with your greens, followed by veggies, followed by your avocado. Lightly sea salt.
Gently use hands to tightly fold the nori over onto all of the ingredients, rolling up the nori like a burrito. Wet finger tips lightly and apply to the edge of the nori, so the nori wrap will be “sealed”.
Now it’s time to start on your next wrap… or you could just dive right in!
