Veggie Nori Wraps with Creamy Hummus and Garlic Spread

Everything about these little nori wraps is my favorite.

I could eat 2000, and in creating this recipe… I ate all 10.

But really…

Nori makes the perfect naturally gluten and grain free wrap. Stuffed with creamy, flavorful hummus and garlic, leafy mache greens, and crisp sweet and earthy vegetables– It is my favorite go-to.

I mean, what better way to enjoy a salad and hummus than with your hands in a Nori burrito?

Makes 3 wraps (6 halves)

3 sheets of Nori

3 tsp Majestic creamy raw garlic spread, Original

3 tbsp Majestic sprouted raw hummus, Original

3 cups loosely packed mixed leafy Organic Girl greens, like mache

1 large carrot, peeled (or washed), then cut in thirds, and then matchstick pieces

1/2 bell pepper, cut into thin wedges

1/2 zucchini, halved, then cut into thin

2 large scallions, halved then sliced lengthwise

Lay out each nori sheet on a cutting board so that lines in nori are running horizontally.

Spread 1 tsp garlic spread onto each sheet, about 2.5 inches from bottom, followed by 1 tbsp of raw hummus.

Add 1 cup, or 1 handful of loosely packed leafy greens covering your spread, followed by harder ingredients: carrots, zucchini, and bell peppers, divided evenly amongst nori sheets.

Finish with scallions (and more hummus optional). Use your fingers to pick up the bottom on the nori sheet and fold it over the veggies, tucking it in like you are rolling up a sleeping bag.

No special kitchen tools needed.

Roll all the up, and cut in half.

Enjoy immediately, or within a 60 minute window, as nori will become very soft.

Creamy. Crunchy. Delicious.
